The little artichoke heart has some big results. When its low in sodium or washed of the sodium with lemon, it becomes great for liver function. It is a source of folic acid, and potassium. There is also some vitamin A, C, calcium and magnesium. The Artichoke can and will cleanse the liver. It can also lower cholesterol, calm the nerves, and potentially lower blood sugar from its magnesium and chlorophyll components. They are great in salads with olive oil, lemon, oregano and garlic cloves, preferably roasted. You can also put them in an omelet with low sodium mozzarella cheese and onions. Very tasty and good for your temperament.
